Kimchi Jjigae "Mee Sedap"

Assalamualaikum WBT & Salam Sejahtera

Lagi n3 tercicir 2014. Saya buat kimchi jjigae Mee Sedap ni sebelum ke Korea hari tu. Selalu dok tengok aje ni saja saya nak try. Sebelum tu saya ada beli sepeket kimchi segera Yes Gourmet untuk budak dekat kampung, fikir2 ngape saya tak cuba jugak.

Kimchi pun tak berapa nampak sebab saya hiris agak halus.

Dakgangjeong (Sweet Crispy Chicken)

Assalamualaikum WBT & Salam Sejahtera

Annyong....Eh tetiba keluar ayat Korea pulak ya.

Hadui daebak betul resepi ni. Sesekali tukar selera, memang maveless.

Ala2 fushion sikit.

Serius saya bagitahu, hasilnya memang superb! Memang sedap.

10 over 10...

DAKGANGJEONG (SWEET CRISPY CHICKEN)
Recipe : Koreanbapsang

Ingredients:
1 pound boneless, skinless chicken thigh and/or breast
1/2 cup milk (optional)
1/4 teaspoon salt
pinch pepper
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1 tablespoon rice wine (if not using milk) saya guna bancuhan air susu tepung

1/3 cup potato starch (or corn starch) saya guna tepung jagung
oil for deep frying

Sauce:
1 tablespoon soy sauce
3 tablespoons rice wine (or mirin)
2 tablespoons apple cider vinegar (or rice wine vinegar)
1 tablespoon gochujang (Korean red chili pepper paste)
3 tablespoons honey (or corn or rice syrup)
2 teaspoons sesame oil
2 tablespoons brown sugar
1 teaspoon minced garlic
1 teaspoon grated ginger
pinch pepper

untuk sos ni saya guna sos pencicah + madu + serbuk halia + cilli flakes
- panaskan atas api sekejap dan sejukkan sebelum digaul denga ayam yang dah siap goreng

1 to 2 tablespoons coarsely chopped peanuts (or almonds) for garnish

Soak the chicken pieces in milk for at least 2 hours in the fridge. This step is optional.
Drain thoroughly. Remove any visible fat. Cut the chicken into bite sized pieces. Mix with the salt, pepper, rice wine (if you didn’t use milk) garlic, and ginger. Let it stand for 20 to 30 minutes.
In a pan, add all the sauce ingredients, and stir well. Bring it to a boil. When it starts to bubble, reduce the heat to medium low, and simmer until it thickens slightly, about 3 to 4 minutes. Turn the heat off.
Add the potato (or corn) starch to the chicken, and mix well to coat evenly.
Add about 1 inch of oil to a heavy bottom pan. When the oil is sufficiently hot (350°F or starts smoking), drop the chicken pieces in one at a time. Fry them in two batches. Overcrowding will drop the oil temperature too quickly. Cook until light golden brown, 1 to 2 minutes. Remove and set them on a wire rack or a paper towel-lined plate.
Reheat the oil to 350°F. Deep fry again until golden brown, about 30 to 40 seconds. You can do the second frying in one batch.
Heat the sauce over medium low heat. Add the chicken and stir well until the chicken pieces are evenly coated.

Dakjuk (Korean Chicken Porridge)

Assalamualaikum WBT & Salam Sejahtera

Lagi masakan Korea yang saya dah cuba. Sangat mudah dan senang. Namanya dakjuk ataupun bubur nasi ayam.

Resepi? Ada di bawah ni...

DAKJUK (KOREAN CHICKEN PORRIDGE)
Source : KoreanBapsang

Ingredients:
3/4 cup short grain rice, soaked for about an hour and drained
4 cups chicken stock
1 cup pulled chicken
1 carrot chopped
1 celery chopped

Add the stock and rice to a large pot and simmer, covered, for about 30 minutes. Start with medium low heat, but reduce to lower heat when the stock is visibly reduced. Stir occasionally (more frequently as the stock is reduced) so the rice doesn't stick to the bottom of the pot.

Add the vegetables, cover and simmer for additional 10 minutes until the vegetables are soft. (At this point you can adjust the consistency of the porridge to your taste by adding more stock or water.) Since the chicken is already cooked, stir in during the last few minutes of simmering. Add salt and pepper to taste.

Gimbap/Kimbap (Korean Dried Seaweed Rice Rolls)

Assalamualaikum WBT & Salam Sejahtera

Pasal jiwa saya berkaitan segala-gala tentang Korea, silakan jangan jemu ya! Saya memang ala-ala Korea sikit, sampaikan ada orang tu kata kat saya, memang dah patut pegi Korea ni, dah kronik sangat katanya.

Tapi sayang sungguh, masa buat ni lupa nak masukkan garam...jadinya sedikit tawar, agak kurang kick la jugak.

Pengalaman memasak beras pendek a.k.a beras Jepun ni memang sesuatu yang baru. Beras ni saya rendam terlebih dahulu, agak lama juga kerana terlupa dek sibuk menjahit. Bila masak, tak sampai pun 30 minit dah masak.

In Sha Allah next time nak cuba lagi.

GIMBAP/KIMBAP (KOREAN DRIED SEAWEED RICE ROLLS)
Source : KoreanBapsang

Ingredients:
3 cups uncooked short grain rice
1 tablespoon sesame oil
salt to taste (about 3/4 teaspoon)

6 gim (aka nori) sheets

For beef:
8 ounces lean tender beef, cut into 1/2 inch-thick long strips
(You can also use thin bulgogi meat or ground beef)
2 teaspoons soy sauce
1 teaspoon sugar
1 teaspoon sesame oil
1/2 teaspoon minced garlic

For spinach:
1 bunch spinach (about 8 ounces)
1 teaspoon sesame oil
salt to taste - about 1/4 teaspoon

For fish cake - eomuk:
1 sheet fish cake - eomuk
1 teaspoon soy sauce
1/2 teaspoon sugar
1/2 teaspoon sesame oil

2 medium carrots, julienned (or 1/2-inch thick long strips)
3 eggs
6 yellow pickled radish (danmuji) strips (1/2-inch thick)

Cook the rice using a little less water than usual. (Fresh cooked rice is best for gimbap.)
Cut the beef into thin strips (about 1/2-inch thick). Mix well with the next 4 seasoning ingredients. Stir fry over medium high heat until cooked through, 2 - 3 minutes.
Blanch the spinach, shock in cold water and squeeze out water. Season with the sesame oil and salt.
Julienne the carrots. Stir fry with a little bit of oil over medium high heat and salt until softened.
Crack and beat the eggs, in a bowl with a spoon or a fork. Stir in a pinch of salt. Heat a pan over medium low heat. Add the eggs to the pan. When the bottom is set, flip it over. Transfer to a cutting board. Cut lengthwise into 3/4-inch thick strips.
Cut the fish cake lengthwise into 3/4-inch thick strips. Mix with the soy sauce, sugar and salt. Stir fry with a little bit (about 1 teaspoon) of vegetable oil over medium heat until softened, about 2 minutes.
Cut the pickled radish lengthwise into 1/2-inch thick strips (unless you bought a pre-cut package).
The filling ingredients are ready.
When all the other ingredients are ready, remove the rice from the rice cooker. While the rice is still hot, add the sesame oil and salt. Mix well by lightly folding with a rice paddle or large spoon until evenly seasoned. Taste a little and add more salt if needed. The rice will cool down during this process and be ready to be used.
Put a sheet of gim, shiny side down and longer side toward you, on a cutting board or a bamboo mat if available. Spread about 3/4 cup to 1 cup of rice evenly over the gim, using a rice paddle or your fingers preferably.
Lay the prepared ingredients on top of the rice close to the side toward you.
Lift the entire bottom edge with both hands and roll over the filling away from you, tucking in the filling with your fingers.
Put firm pressure over the roll with the help of the bamboo mat, if using, to close everything in tightly. Then, continue to roll again, putting pressure evenly over the roll using both hands.
Rub or brush the roll with a little bit of sesame oil for extra flavor and shiny look. Apply a little bit of sesame oil to a sharp knife. (This will keep rice from sticking to the knife. Repeat as necessary after each cut. Wipe the knife with a damp towel if the rice still sticks.) Cut the roll into 1/2-inch bite sizes.

Gyeran Mari With Gim (Korean Rolled Omelette with Dried Seaweed)

Assalamualaikum WBT & Salam Sejahtera

Rasanya pun not bad. Kalau sape yang pernah menikmati makanan Korea, mesti dah tahu kebanyakan makanan mereka kurang rempah dan perasa. Ada yang sedap tu sedap, tapi most of them kebanyakannya lecah leweh kata orang Kelate, jadi pandai-pandai la ejas. Saya ni pun bukan pernah makan masakan Korea tu, hanya tengok di tv... he he he.. jadi tambahkanlah apa yang patut untuk up kan rasanya.

Dilawan pula dengan nasi goreng Cina rempah segera, segalanya sempurna... Nak cuba? Resepinya ada saya copy di bawah...

GYERAN MARI WITH GIM (KOREAN ROLLED OMELETTE WITH DRIED SEAWEED)
Source : KoreanBapsang

Ingredients:
3 eggs
1 sheet gim (dried seaweed - aka nori)
pinch salt
vegetable oil for frying

medium size non-stick pan (9 to 10-inch).
Crack and beat the eggs, in a bowl with a spoon or a fork, until the yolks and whites are blended well with no visible strings of whites. Stir in a pinch of salt. (If using, stir in chopped vegetables.)
Add a teaspoon of vegetable oil to a medium size non-stick pan and distribute the oil evenly using a napkin or paper towel. Preheat over medium low heat, until it feels hot when you place your hand 2 to 3 inches above the bottom of the pan.
Add 2/3 of the eggs to the pan. Swirl it around to cover the pan. (Reduce the heat or raise the pan away from the heat, for a little while, if the egg is cooking too fast.)
When the egg is set but the surface is still wet, add a sheet of gim. Pour the remaining egg over the gim and swirl the pan around to spread the egg mixture evenly.
When the egg surface is set again, using a spatula, lift one end of the egg (about 1-1/2 inch) and fold it over to the other side. Quickly lift the folded part and fold it again. (The egg should be slightly wet while being folded, or the roll will become loose when sliced.)
Repeat the process until an egg log is created.
Remove from the pan and let cool for about 5 minutes. Slice the egg into thick, even pieces (3/4 to 1-inch thick).

Korean Rolled Egg Omelette (Gaeran Mari)

Assalamualaikum WBT & Salam Sejahtera

Sebutlah apa sahaja tentang Korea, sangat sangat teruja tentangnya.

Tapi tak mengapalah, telur dadar saya tu pecah sebenarnya masa nak dibalikkan. Jadi bila nori diluar tak nampak la yang pecahnya tu. Bijak kan...

Rasanya agak sedap jugak. Kalau pekena dengan nasi Jepun / nasi Korea mesti lagi sedap rasanya. Lepas ni nak cuba buat versi tak ada nori pulak. Resepinya saya letak di bawah kalau nak buat lain kali.

KOREAN ROLLED EGG OMELETTE (GAERAN MARI) RECIPE
Source : Koreanfood

Ingredients:
3 eggs
1/2 small onion, finely chopped
1/2 small carrot, finely chopped saya ganti dengan cili - cincang
1 sheet Korean roasted seaweed (Gim)
1 tsp salt, dash of pepper
saya tambah 2 biji cendawan butang - dadu

Preparation:
Mix eggs with whisk or fork and add onions and carrots until well combined.
In a lightly greased saute pan, pour egg mixture and heat slowly over low heat.
Heat slowly for a few minutes until almost cooked through, then place seaweed sheet on top of omelette.
Roll omelette into a tight roll by lifting side with spoon or baking spatula.
Let omelette rest for a few minutes to cool.
Slice into 1 inch pieces and serve with cross-sections showing.

(Serves 1 as a snack and 3 as a side dish).

*I make this in a very large saute pan but if you are using a standard size, pour 1/2 of the egg mixture in first and make it in 2 batches.
